Breaded Cod filé

A lovely cod fillet always tastes good, extra good is it if you chop nuts and dip it in before you fry it golden in butter. The nuts gives it such a lovely nutty flavor. Serve with homemade mayonnaise and a vegetable of your choice. I like broccoli serves well with fish, and quick to fix.

Recipe for 2 Pers.

  • 400gr Cod Fillet
  • 1 cup almonds
  • 1dl cashew
  • 1 egg
  • Celtic sea salt
  • Freshly ground pepper from the mill
  • Butter for frying.

Rinse and dry the fish fillet with paper towel. Beat the egg and dip the fish fillet in the beaten egg. Chop the nuts and dip the fish fillet in the chopped nuts. Heat a frying pan and add the butter. When it starts to get a little nut-brown in color add the fish fillet, salt and pepper. Fry about 5 min on each side, depending on how thick fillet is.

Serve with mayonnaise and a bit of freshly boiled broccoli.

Homemade mayonnaise.

  • 2 egg yolks
  • 1 tsp. French Dijon mustard.

Whisk together  the 2 ingredients with an electric mixer. When it is well mixed, I usually put the bowl on a kitchen cloth that is slightly damp as it stands firmly.

  •  Melt 1/2 cup coconut fat
  • and mix with 1/2 cup olive oil
  • add 1/2 cup neutral sesam oil

Whisk in the oils in a fine stream into the egg yolks, while whisking all the time and make sure it is well mixed, do not rush. When the oils are beaten down add in

  • 1/2 fresh lemon
  • A little cold water until the mayonnaise gets a texture that you like.
  • add a little salt and pepper.

This mayo goes well on top of omelets, eggs, meat, chicken, salads etc. You can save it in the refrigerator for up to a week. When you are using it, add  flavours that you like, garlic, fresh herbs or use your own imagination.
