Frittata

Many people often ask me what I eat for breakfast since I don´t eat gluten. My answer is always, everything else :). This lovely frittata for example is one thing you can serve together with bacon, ham and avocado. You can save it for a couple of days in the refrigerator and if you are in hurry in the morning just take a piece and reheated in the oven during the time you get your shower and get ready for the day. At the same time you can put some bacon in by the side and everything is ready at the same time. Frittata is also good to bring in your lunchbox or to a picnic.

Ingredients

  • ½ zucchini
  • ½ leek
  • ½ red bell pepper
  • ½ green bell pepper
  • Handful of parsley chopped
  • 10 eggs
  • Olive oil
  • Celtic sea salt
  • Fresh pepper from the mill

Put the oven on 175 C. cut all the vegetables in smaller pieces. Fry them in a skillet with olive oil a couple of minutes 5-8min. The should still have there crunchy firm structure. During the time beat 10 eggs together and add salt and pepper. Add it to the vegetables and put in the chopped parsley. Poor everything into an oven proof dish and put into the oven for about 20 minutes.

Serve with bacon, ham, avocado, salad.
