This is a side dish that I´m totally obsessed about! It is so delicious and easy to make, takes care of itself in the oven. I use it in salads, for breakfast and mixes with my fermented cabbage. I also use as decoration on other dishes. Yes, I´m sure you can find more usage, please let me know if you tried something else.
Semi-dried cherry tomatoes.
- 1 kg small tomatoes, preferably mixed colors
- 2 Tbs. olive oil
- 2 tsp. honey
- Celtic sea salt
- Finely chopped oregano or basil, or use Italian seasoning mix
Wash the tomatoes well. I usually spray some vinegar first and then rinse them well in cold water to remove any impurities. Dry them with a kitchen towel.
Preheat the oven to 125 degrees C. Cut the tomatoes in half and place them on a baking sheet on an ovenproof dish. Drizzle with olive oil and honey. Season with salt. Sprinkle with fresh chopped Oregano or Basil. Or you can use Italian rub.
Place in the middle of the oven and let stand for about 2 hours. (If you have regular oven so open the door now and then to let out the steam). Let them cool. Then you can put them in a glass jar and pour the olive oil to cover, and then they will last a long time.
